I was enjoying cold weather and suddenly sunshine made an appearance for few days, which made me yearn for a cold drink. Bored of the same old cold chocolate/coffee , I wanted something different.
Plain iced coffee is one of my favorite liquid pleasures, sometimes a dash of hot chocolate makes it better. Adding coconut milk was a last minute idea and I loved it. It has a mild coconut blended with coffee - chocolate taste. It is quite filling. The quantity of coconut milk can be reduced or increased depending on how you like it
Chocolate Coconut Iced Coffee
Recipe by A Spoonful of Yumm
Total Time : 10 minutes
Serves : 3-4
Ingredients ~
Hot Milk - 400 ml
Chilled Coconut Milk - 200 ml
Iced Cubes - 4-5
Instant Coffee Powder - 3 tspns
Chocolate Powder - 2tspns (i used cadubury's hot chocolate)
Sugar - 4 tbspns
Method ~
In a bowl add the coffee & chocolate powder, sugar. To this add 1/2 cup hot milk and mix using a whisk for a minute
Add remaining milk and stir again for 2-3 minutes. Allow it to cool, add ice cubes and stir again
Slowly add coconut milk and mix well for a minute
Pour into glasses & serve. Enjoy !
(for the plates, i made designs using chocolate syrup, poured it straight from the squeeze type bottle and froze them for 15-30 minutes, the longer the better it freezes)

@vijitha thanks. i squeezed hershey's chocolate syrup from its squeeze type bottle onto the saucer , make any design you like and freeze it for a good 30mins. though i did it just for decoration, maybe you can skip decorating the centre, if you want to place the glass on the saucer. chocolate syrup tends to merge so it pooled at the centre and gave the edges a nice stained effect
