Dark Chocolate Muffins to #Welcome2012 & Review of Last Year

2011 was fun and flew by fast. Good times always get over quickly, but better moments lie ahead for which I wait patiently , hoping to unwrap them with joy. For me its just another year , I don't make any resolutions because I'm not good at keeping them.

WELCOME 2012

A sweet start to this year is perfect for you & me ! I've made this muffin recipe few times and I love it. The muffins are soft and scrumptious. This recipe is one that I turn to always, when making muffins. Happy with the texture & taste. I modified the recipe and added cooking chocolate (white & dark) Also made a  simple white chocolate topping, melted with butter. I made muffins and cake with the batter.
 
Dark Chocolate Muffins  
Recipe Adapted from Sanjeev Kapoor

Prep Time : 20mins
Baking Time : 35-40mins 
Serves : 18
Cooking Level : Easy 
Ingredients :
250gms All Purpose Flour
2 tspns Baking Powder 
4 tbspns Cocoa Powder
Pinch of  Salt
250 gms Castor Sugar
250gms Cooking Chocolate (white & dark - 125gms each or just dark will do)
250 gms Butter at RT
1 tspn Vanilla Essence
1 Cup Buttermilk
4 Eggs
Oil or Butter for greasing moulds or Cupcake Wrappers

Icing :
50gms White Chocolate
1 tbspn butter

Method :
Grease muffins moulds using oil or melted butter or use cupcake wrappers
Preheat oven to 180C for 10 minutes
In a bowl, sift dry ingredients (flour, baking powder, cocoa powder, salt)
In another bowl, add butter and sugar , mix using hand mixer till it becomes light and soft
Melt chocolate over a double boiler to form a smooth liquid, cool a bit and add to this and mix
Add one egg at a time to this and mix well
Slowly add the dry mix (flour -cocoa mixture) to this, few spoons at a time and mix again
Add buttermilk little by little at the same time to make it smooth
Finally add the vanilla essence and mix well
Pour the batter into greased muffins moulds /cupcake wrappers upto 3/4th of the mould
Place in the middle rack and bake at 180C for 35-40minutes till toothpick/fork comes out clean
Place on wire rack to cool 
Melt icing ingredients in a double boiler . Should be thick like custard. Spread on top of the muffins using a spoon
Eat warm !

Tip : Even if the height of the cupcake wrappers are an inch or two more than that of the mould, you can add more batter according to the height of the wrapper
