Random Chocolate Mousse (Eggless)

Happiness enters my life with utmost pleasure in the form of tiny, delicious cookie bites. It is the little special things that make life worth living. The song my favorite things is delightful and full of dreamy  thoughts and it is one of my all time favorites.


I see this quote often on the internet & I love it, so true ~ Enjoy the little things in life , for one day you may look back and realize they were the big things

This chocolate mousse was so random, I whipped up some ingredients that were lying around. Glad it tasted scrumptious. Great way to use leftover ingredients which serve as thickeners too. The mousse is slightly grainy with a raisin flavor.

Random Chocolate Mousse 
Recipe by A Spoonful of Yumm
 

Prep Time : 10mins
Freeze Time : 30mins in freezer
Serves : 2
Cooking Level : Easy
Storage : 2 days in fridge

Ingredients ~

Chilled Low Fat Cream - 200ml
Nutella - 2 tbspns
Chocolate Powder - 5 tbspns (Cadbury's Hot Chocolate) or Sweetened Cocoa Powder
Coconut Topping - 2 tbspns ( recipe here ) (optional)
Plain Biscuits - 2 ( i used parle g , marie is good too)
Almonds - 10
Raisins - 2 tbspns
Milk - 2 tbspns
Sugar - 6tspns

Garnish :
Slivered Almonds - 4 Almonds
Crushed Biscuits - 2-3

Method ~ 

In a mixer add almonds, raisins and milk and blend to form a coarse paste
Crush biscuits to powder form using mortar-pestle or hands
In a bowl whisk nutella and cream together. Next add chocolate powder, sugar and mix well for 2 minutes
To this add coconut topping , crushed biscuits and whisk again 
Lastly add the almond raisin paste and mix for 2-3 minutes
Pour into small serving bowls and freeze for 30minutes
Garnish with slivered almonds and powdered biscuits at serving time

Suggestion ~
You can layer the mousse with crushed biscuit layer (add little water to make the biscuit layer soft) alternately
