Chocolate Chip Streusel Muffins & Spice Coffeecake for R'ock-tober !

Diwali is almost over, I wish this festival came by more often...

CHOCOLATE CHIP CINNAMON STREUSEL MUFFINS


Family friends had come over and they couldn't resist the heavenly aroma coming out of the oven. I had no choice but to part with the crunchy top muffins. Hey ! It's cake..... never say no to delish goodies


I'm glad I made them for Diwali, they sold out like hotcakes . I barely got to take pictures, and had to fight a bit to taste them too. I used a pretty flower mould, which I love a lot. 


Baked  yummy muffins & coffeecake for Abby Dodge's R'ock-tober #baketogether ! Fun idea :-) She gave more than enough options to play around with, which worked well for me. Modified the recipe a bit and added chocolate chips for the streusel. I used half the batter to make muffins & remaining half for the coffeecake. I loved the muffins more, the crunchy chocolate chips were yummy. I used 
multi grain flour to make the batter . Added dry ginger & yogurt instead of nutmeg & sour cream. The yogurt made it really soft. The coffeecake tasted better the next day .


*Streusel is a crumb topping made of flour, butter and sugar baked on top of cakes , breads and muffins.
*Coffeecakes are usually square or rectangular flavored with spices, fruits and nuts and have a crumb topping  or glaze 

Chocolate Chip Streusel Muffins & Spice Coffeecake 
Recipe adapted from Classic Sour Cream Coffeecake

Prep Time : 20mins
Bake Time for Muffins : 30mins
Bake Time for Coffeecake : 30mins
Serves : 10-12
Cooking Level : Easy

Ingredients ~ 

For the streusel :
2/3 cup ( 4  5/8 ounces ) demerara sugar
3/4 cup ( 3 3/8 ounces ) multi grain flour ( flours- whole wheat, oats, maize, soya, bengal gram & psyllum husk powder)
1 1/2 tspns ground cinnamon
100gms chocolate chips
4 tbspms butter, melted and cooled

For the cake :
2 cups ( 9 ounces ) multi grain flour
1 1/4 tspn baking soda
3/4 tspn ground cinnamon
1/2 tspn ground dry ginger 
1/2 tspn table salt
Pinch of ground cloves 
8 tbspns (4 ounces ) butter, softened
1 1/4 cups ( 8 3/4 ounces ) demerara sugar
1 tspn pure vanilla extract
2 large eggs at RT
1 cup thick yogurt at RT 

Method ~ 
To make the streusel :
In a small bowl, combine the brown sugar , flour , cinnamon and chocolate chips. Drizzle over the melted butter and using fork or with hands , mix ingredients to blend well and form small crumbs. Pop in the fridge while you make the cake batter.

To make the cake :
Position oven rack in the center of the oven. Heat oven to 180C for 10-15minutes
Place muffin wrappers in the muffin tray, grease and dust round baking tin (5 & 1/2 inch ) with flour. Keep both aside
In a medium bowl, combine flour, baking soda, salt, cloves, dry ginger and cinnamon. Whisk until well blended. In a another large bowl beat butter, sugar and vanilla using hand mixer (paddle attachment) on medium speed until well blended, about 3 minutes. Add eggs one at a time beating well after each addition. Stop to scrape the bowl and beaters as needed. Add half the flour mixture and mix well using beater till blended on low speed. Add yogurt and mix until blended. Using a rubber spatula fold in the remaining mixture

Using a ladle or ice cream scooper , add batter to 9 muffin moulds upto 3/4th of the height of the wrapper. Spread little streusel mixture over each muffin mould. Bake at 180C for 30minutes till pick comes out clean
Add remaining cake batter to the greased baking tin, spread remaining streusel mixture on top. Bake at 180C for 30minutes till pick comes out clean. (Can be checked at 25minutes)

(note : in bake mode only bottom coils heats up in my oven, so adjust baking time accordingly)

Serve hot with a scoop of ice cream !

  3. What a great idea to use muffin molds and a flower tin too - too CUTE! Love also that you used multigrain flour {is it Pillsbury?}. Must try using some in my bakes one day...yummy post! Happy belated Diwali Shruti!
