4 and 1/2 Cups Milk
400 gms Fresh Cream (Amul)
1 Tin Condensed Milk
2 Heaped tbspns Custard Powder
2 Level tbspns Powdered Sugar
1 Level tbspn Vanilla Essence
2 Level tbspns Honey
200 gms Dried Figs
1 and /12 tbspns Sugar
1 and 1/2 Cup Water
4-4 and 1/2 tspns Gelatine ( you can use china grass , agar agar instead )
*Gelatine :
Make this just before you are going to add it to the mix.( See method ) Mix the powder in water (just enough to cover the gelatine) and keep on stove , low flame . Stir continuously so that no lumps are formed, till gelatine dissloves. Cool to RT. (You can increase the amount of gelatine if you feel the mousse has not set well later . You can add and beat again and set in freezer )
*Caramelized Nuts Topping : ( you can make this when the mousse is setting in the freezer )
Use a thick bottomed flat pan , heat it for 2 minutes.Low flame - Add 4 tbspns sugar and keep stirring till it melts and becomes light brown. Add chopped cashews and walnuts (50gms in total) and stir and mix well with the liquid sugar . Or you can use 50gms of only cashew or walnuts. Should become dark brown, sticky. Takes 10-15minutes. Transfer this to a greased steel plate (greased with oil or butter ). It will harden to form a uniform mass. After it cools , crush it to small pieces using mortar and pestle. Can be stored in an airtight container for 2 months easily. This crunchy topping goes well with ice cream too

Chop the figs and boil with sugar ( 2 tbspns) and water ( 1 and 1/2 cup ) .You can add extra water if required, in case it dries up. Takes about 10 minutes till it becomes little soft and somewhat sauce like, on medium flame . Cool it. Boil the milk( 4 - 4 and 1/2 cups) and make custard with sugar ( according to your taste ) and custard powder . Cook till thick and cool. Liquidize the figs in a mixer to a puree . Add the liquidized figs to the custard and some to the condensed milk. Mix both and to this add fresh whipped cream (whip it beforehand and add to this ) , vanilla essence and honey . Blend well using whisk/blender for 5 minutes on low-medium speed . Lastly add melted *gelatine slowly and beat well (low speed) into the mixture. Add sugar if required (since sugar has been already added with the figs and custard). Set in the freezer for 2-3 hours till it becomes thick like mousse. Remove it about 30minutes before serving in case it becomes hard like icecream. Serve with whipped cream and *caramelized nuts on top !
